Easy and Delicious Laksa Noodle Bowl

Ingredients for the Paste:
• 3 dried red chilies
• ½ inch piece ginger, peeled and sliced
• 3 whole cloves of garlic
• 4 fresh red chili peppers
• 1 onion, chopped
• 2 stalks of lemon grass
• ¼ cup olive oil
• 2 teaspoons curry powder
• 1 teaspoon ground cumin

Ingredients for the Soup
• 3 cups chicken broth
• 1 pounds boneless, skinless chicken breast, sliced
• ½ cup cooked soba noodles
• 2 teaspoons light brown sugar
• ¼ cup olive oil
• 2 14-ounce cans coconut milk, divided

To Make the Paste
1) Boil the peppers for 5 minutes, until tender
2) Drain the water from the peppers and put them into a food processor
3) Add the remaining paste ingredients to the food processor and blend until a paste with even constancy has formed.

To Make the Noodle Soup
1) Boil the soba noodle in the chicken broth until tender
2) In a separate pot brown the chicken strips in olive oil for 3-5 minutes.
3) Add the Laska paste, soba noodles and remaining ingredients to the pot with the chicken and simmer for 20-25 minutes.
